Old Faithful is the most limited release Wyoming Whiskey has made. Roughly five hundred bottles exist, drawn from just three hand selected barrels of ten year old wheated bourbon, which the distillery describes as the oldest wheated bourbon in its warehouses. That scarcity is not marketing framing. Three barrels is all there was. Wyoming Whiskey distils in Kirby, in the Big Horn Basin, using non GMO grains grown locally and limestone filtered water drawn from a mile deep aquifer, and the wheated mashbill matters here: with no rye in the recipe, wheat softens the whiskey and lets the corn sweetness and the oak carry the weight. Ten years in Wyoming's climate, with its severe temperature swings, drives considerably more wood interaction than a Kentucky rickhouse would over the same span. The release honours both the geyser and F. Jay Haynes, Yellowstone's first official photographer, whose image appears on the label, and Wyoming Whiskey donated one hundred and fifty thousand dollars to Yellowstone Forever alongside the launch. Bottled at 54 percent alcohol by volume, 108 proof. It pours mahogany. The nose gives deep red fruits and dark chocolate. The palate opens on baking spices before moving through orange peel, toffee and Black Forest cake with crushed almonds, and the finish carries cacao powder and vanilla bean with toasted spice and dried sultana. This is a bottle to open for something worth marking, or to keep. Drink it neat.
