Tasting Notes

Color: Velvety deep amber with rich mahogany highlights from three decades in oak.

Nose: Caramelized figs, honeyed bread, wheat crust, dried apricot, freshly kneaded dough, toasted almond, clove, and subtle Vin Santo dessert wine sweetness.

Palate: Velvety and rich, with spiced orange peel, dark chocolate, butterscotch, rum raisins, roasted nuts, marzipan, hazelnut, and gentle floral undertones woven through deep oak and dessert wine layers.

Finish: Long, warm, and enveloping, with toasted oak, vanilla bean, leather, sweet tobacco, baking spice, and a faint wisp of smoke trailing off into a meditative close.

Why is the whiskey from Canada? WhistlePig was founded in 2008 and does not have its own 30 year old stocks, so they sourced an exceptional 1995 distilled single malt from Glenora Distillery in Nova Scotia, the first single malt distillery in Canada. The whiskey was matured for three decades in oak before being shipped to WhistlePig's Vermont farm in 2024, where head blender Meghan Ireland selected Vin Santo casks for an exclusive finishing period. The bottling and packaging are entirely WhistlePig at the Vermont farm.
