The Añejo is the darkest and most restrained bottle in the KAH range, and the one that best rewards a close look. It comes in a black ceramic flask, the sugar skull worked across the front panel in silver and gold rather than the bright reds and oranges used elsewhere in the line, with fine scrollwork above and below and the eyes picked out in gold. Each bottle is painted individually, so no two are quite alike. The design draws on Nicaraguan Day of the Dead practice, in which families do not simply tend and decorate graves but often sleep at the gravesides of their loved ones, keeping the connection with the dead active rather than commemorative. The tequila is made from 100 percent Blue Weber agave grown in both the highlands and lowlands of Jalisco, harvested after six to seven years, then cooked, milled and filtered before a long fermentation and double distillation. It is brought to strength with reverse osmosis and charcoal filtered water drawn from a nearby volcanic spring. The bottle states that it is cask aged in American oak for more than a year, which places it firmly in añejo territory and shows clearly in the glass. Expect toasted oak, caramel and vanilla on the nose with roasted coffee, tobacco and gentle spice behind, then a full bodied palate of sweet cooked agave, dark chocolate and aged oak, finishing warm and rounded on cocoa and toffee. Production is at Fábrica de Tequilas Finos in the town of Tequila, Jalisco, under NOM 1472. Bottled at 40 percent alcohol by volume. Best neat after dinner, though it has enough weight to carry a serious margarita.
