Horse Soldier Bourbon is made by American Freedom Distillery, founded by former US Army Green Berets who deployed into northern Afghanistan on horseback in the days after 11 September 2001, the operation that earned them the name Horse Soldiers. After the attacks, the New York City Port Authority donated steel recovered from the World Trade Center to the brand, and every Horse Soldier bottle is formed in a mould made from that steel. A portion of proceeds supports the America's Response Monument at Ground Zero and a range of veteran organisations. This set pairs two bottles of Signature Small Batch with one Barrel Strength. Both are wheated bourbons from a mash of 70% yellow dent corn, 20% soft red winter wheat and 10% two row barley, aged in new American oak with no additives or artificial colours. Signature Small Batch is bottled at 95 proof, a number chosen for the founders' Special Forces team number. Expect butterscotch, vanilla and dark cherry with cinnamon, liquorice root and a hint of spicy oak. Barrel Strength is the same recipe bottled uncut at around 113 proof, where the wheat softness carries considerably more weight: caramel, honey and butterscotch alongside cashew, spiced raisin and toffee, finishing long on dark stone fruit and oak.
