Glendalough Pot Still Irish Whiskey is a celebration of two things the distillery holds dear, the most Irish of whiskey styles and the native Irish oak that grows in the Wicklow mountains around its home. Single pot still is the quintessentially Irish style, made from a mash of both malted and unmalted barley, and Glendalough felt there was no more fitting wood in which to finish it than Irish oak itself. The distillery is proud to play its part in reviving the use of Irish oak for cask making, a practice that had all but disappeared. This whiskey is first matured in ex bourbon casks, which soften and sweeten the spirit, then finished in 250 litre hogsheads made from slow toasted virgin Irish oak. Those trees are harvested in the Wicklow mountains under a Continuous Cover Forest management system, with seven saplings planted for every oak felled, so the flavor comes with a genuine sustainability story. Native Irish oak carries higher levels of natural flavor than most other oak, which complements and balances the classic pot still spices. Each bottle is numbered and traceable back to its individual cask and even to the tree from which it came. Bottled at 43 percent alcohol by volume, it pours a warm gold and opens sweet and citrusy on the nose with vanilla, caramel, banana and treacle over earthy, herbal undertones of oak spice and leather. The palate is chewy, warm and buttery, with pot still malt and spice giving way to toffeed pears, treacle, cinnamon, nutmeg and distinctive toasted, tannic oak. The finish is long, with creamy vanilla, almond, forest fruit and toasted Irish oak. Enjoy it neat, with a drop of water, or in an elevated Irish whiskey cocktail.
