This bottle does something genuinely unusual. Agave tequilana, the blue Weber agave, is the plant behind every bottle of tequila in the world, and it is almost never used for anything else. Amarás grew it in Tlacolula, Oaxaca for eight years and then made mezcal with it, using entirely traditional Oaxacan methods. The result sits in a strange and fascinating middle ground: a spirit built from the most familiar agave in the category, expressed through a production process that has nothing to do with how tequila is made. The whole process is printed on the label. The piñas are roasted in a conical oven fired with encino oak over volcanic stone, which is where the smoke enters. They are then crushed by mazo, a wooden mallet worked by hand, which is slower and gentler than either a tahona or a mechanical mill and one of the more labour intensive methods still in use. Fermentation happens naturally in open wooden vats, and the spirit is double distilled in small copper alembics in batches of roughly a thousand litres. It is bottled unaged at 43 percent alcohol by volume as a numbered limited edition of 5,066 bottles. What reaches the glass is crystal clear and balanced. Expect roasted agave, a delicate smoke that never dominates, bright citrus and a vibrant mineral streak, with the sweetness of the blue agave clearly recognisable underneath the Oaxacan character. Drink it neat in a copita at room temperature. If you know tequila well, this is the most interesting bottle of mezcal you can pour, because you already know the raw material.
