Wyoming Whiskey Barrel Strength is the distillery's most elusive and coveted release, a single barrel, barrel proof bourbon drawn from the top one or two barrels in the warehouses at Kirby, Wyoming. This bottle is the Special Distillery Selection, a limited edition hand numbered from barrel 5440 and bottled at a mighty 127.4 proof, the exact strength of this individual cask. Wyoming Whiskey earns its name honestly. It is made not just in Wyoming but of Wyoming, crafted from non GMO corn, wheat and barley grown in the Bighorn Basin and water drawn from a local limestone aquifer, then grown, distilled, aged and bottled entirely in the state. The mash bill is a distinctive wheated recipe of 68 percent corn, 20 percent wheat and 12 percent malted barley, and this release carries a full 10 years of maturation in new charred oak. Aging in the high basin between the Absaroka and Bighorn Mountains is anything but gentle, with warehouse temperatures that soar in summer and plunge in winter, driving deep interaction between spirit and wood. Bottled at barrel strength with no dilution, it captures maximum flavor and richness. Expect a deep copper to mahogany pour and an intense nose of Demerara sugar, plum pudding, apricot jam and dark chocolate covered espresso beans. The palate delivers dried fruit, cherry cobbler, rum raisin, orange zest, toasted caramel, leather and warm baking spice, while the finish is long and dry with lingering butter creme, candied orange peel and dark dried fruit. As a barrel proof single barrel, each bottle is a unique snapshot that will never be repeated. Add a few drops of water to open it up, or sip it neat to experience Wyoming terroir at full power.
