Extra Seco is the bottle that quietly undermines the assumption that clear rum means young rum. Flor de Caña has been distilling at the foot of the San Cristóbal volcano in Chichigalpa, Nicaragua since 1890, now under the fifth generation of the same family, and this expression spends a full four years resting in ex bourbon barrels before it is carbon filtered back to crystal clarity. Nothing is rushed and nothing is added to fake the color out. What that gets you is a white rum with actual barrel derived depth underneath the lightness, which is rare in a category built mostly on neutrality. The distillate itself is made from locally harvested sugarcane molasses and, per the producer, run five times through column stills for purity before it ever reaches wood. The tropical Nicaraguan climate does the aging work faster and more aggressively than a temperate warehouse would, so four years here reads heavier than four years elsewhere. On the palate it lands dry, which is the whole point of the name: seco means dry, and the brand states the rum is made without added sugar, so there is no syrupy weight propping it up. Instead you get soft vanilla, coconut, orange peel and a faint bourbon barrel spice sitting on a light, silky body. This is a professional bar staple for good reason. It builds a better daiquiri and a better mojito than a neutral white rum will, because there is something in the glass for the lime to work against, and it takes a highball with soda or tonic without disappearing. It is also clean enough to drink over ice if you want to see what it is doing on its own.
