The vessel is an amphora form in clear glass mounted on a hand painted Talavera style ceramic pedestal, with a matching ceramic crown as the stopper, all in the cobalt and white palette that has defined Mexican decorative pottery since the colonial period. It is genuinely striking, and it is built to survive the bottle being finished. What is inside stands up on its own terms. The tequila is made in the highlands of Jalisco under NOM 1466 from 100 percent mature blue Weber agave. The piñas are slow roasted in traditional masonry ovens rather than pressure cooked, roller milled, fermented naturally in stainless steel and double distilled. It is bottled unaged and is certified additive free, meaning no glycerin, sugar syrup or coloring has been used to round it off after the fact. That matters in a category where those additions are permitted and undisclosed, and it means what reaches the glass is the agave and nothing else. The result is crystalline with a silvery cast. The nose gives cooked agave with mint, tangerine and plum. The palate is agave forward and clean, carrying that same mint alongside citrus and a distinct note of pineapple. It finishes bright rather than heavy. Serve it neat or with a twist of lime to lift the mint and fresh agave, and it makes an excellent Tommy's Margarita or Paloma. The producer suggests pairing it with ceviche, grilled fish, steak tartare or salmon carpaccio, which suits its brightness well.
