Rare Stash Bourbon #2 is built on a simple premise: every so often you come across something truly rare, and it deserves to be bottled with care rather than blended away. The brand seeks out unique, select and highly limited barrels of bourbon that have been set aside, then artfully crafts them into a whiskey that is distinctive in form, age, taste and availability. For this release, two straight bourbons were married together, an 8.5 year old aged in number four char white oak barrels and a 7.5 year old rested in number three char white oak, sourced from Tennessee and Indiana and brought together in Bardstown, Kentucky, the heart of bourbon country. Both components share a mash bill of 75% corn, 21% rye and 4% malted barley, giving the blend a backbone of rye spice beneath its sweetness. Bottled at 45.5% ABV (91 proof), the strength was chosen deliberately to magnify the natural flavors rather than mask them, so the taste and finish deliver an extended array of flavor with a soothing heat. The nose is rich and slightly sweet, with vanilla, oak and caramel. The first sip fills the palate immediately, then settles into a penetrating warmth carrying balanced notes of vanilla, butterscotch, oak and a hint of chocolate. The finish is long and tantalizing yet smooth, with the kind of balance between flavor and proof that keeps you reaching for another pour. Bold and smooth at once, it works neat, over a large cube, or as the backbone of a serious Old Fashioned. Presented in a heavy squared decanter with a wood topped cork and copper foiled labeling, it makes a handsome gift for anyone who appreciates a well aged, well blended bourbon.
