The whiskey starts as the same Old No. 7 mash, charcoal mellowed through 10 feet of sugar maple charcoal in the traditional Lincoln County Process, then matured in new American white oak. After primary aging, it gets a second life in golden hued maple wood barrels for an additional 6 months to a year, then runs through the Lincoln County Process a second time before bottling. No. 27 Gold goes through this process twice: it's mellowed before primary aging, finished in a second set of maple wood barrels, then mellowed a second time before bottling.
Why is the maple character so prominent? Maple wood barrels impart far more sugar maple character than American oak.
