Jura Seven Wood is a uniquely cask layered Island single malt from the Jura Distillery on the remote Isle of Jura, an island off the west coast of Scotland with one road, one pub, one distillery, and fewer than 250 human residents (but plenty of red deer). Founded in 1810 and now part of the Whyte and Mackay portfolio under Emperador Inc., the distillery built this expression around an ambitious seven cask maturation program that gives Seven Wood its name. The whisky begins life in first fill American white oak ex bourbon barrels for primary maturation, then a portion of the spirit is split across six different virgin French oak casks sourced from six distinct French forests: Limousin, Tronçais, Allier, Vosges, Jupilles, and Les Bertranges. The casks are produced in partnership with the Demptos cooperage, with each forest contributing its own micro signature of spice, sweetness, and tannin to the final blend. The base spirit is predominantly unpeated Jura malt with a small portion of peated Jura blended in, giving the finished whisky a subtle wisp of smoke beneath the rich oak and fruit. Bottled at 42% ABV in a distinctive squared off bottle, this is one of the most genuinely original cask compositions in the Scotch category and a worthy showcase of the Master Blender's craft.

FAQ

Why seven different oak casks? Most single malts use one or two cask types for primary maturation and finishing. Jura Seven Wood pushes that approach to its limit by using seven distinct oak sources: first fill ex bourbon American white oak for primary maturation, then six different virgin French oak casks from six different French forests (Limousin, Tronçais, Allier, Vosges, Jupilles, and Les Bertranges). Each French forest produces oak with different tannin profiles and aromatic compounds, so the layered finishing adds an unusually complex spice, sweetness, and depth signature that no single cask could deliver.

Is this peated? Only lightly. The base spirit is predominantly unpeated Jura malt blended with a small portion of peated Jura, giving the finished whisky a gentle wisp of smoke rather than the heavy peat character of Islay neighbors. Most drinkers experience the cask spice and fruit as the dominant notes, with smoke appearing as a subtle background layer.

What is the Demptos cooperage connection? Jura works with the Demptos cooperage in France to source and build the six French oak cask types used in this expression. Master coopers at Demptos maintain a library of 188 different "ingredients" of wood characteristics that they tune for each whisky brand. The casks are toasted to specific specifications, with the inside reaching around 200 degrees Celsius while the outside stays around 35 degrees, creating freshly baked bread aromatics that translate into the final whisky.
