Where every other 1792 release uses the brand's signature high rye mash bill, Sweet Wheat takes the opposite approach, replacing rye with wheat as the secondary grain to deliver a softer, mellower, dessert leaning profile that stands in deliberate contrast to the spicy character 1792 is known for. Aged approximately 6 to 8 years in new charred American oak and bottled at 91.2 proof, this annual limited release was introduced in 2015 and has earned a loyal following alongside other revered wheated bourbons in the Kentucky landscape. Nose: Delicate and inviting, with honey, vanilla bean, baked apples, and fresh oak, layered with subtle peach cobbler, peanut brittle, and a touch of cream cheese icing.
Palate: Creamy, buttery, and well rounded, with vanilla custard, soft toffee, sweet corn, toasted almond, and a gentle cinnamon spice ride from the wheat.
Finish: Surprisingly long and warming for the proof, slightly drying on the tongue, with lingering toffee, gentle oak, and a soft chest warmth.
What's a wheated bourbon and how does it taste different? Bourbon is required by law to be at least 51% corn, with the remaining grains chosen by the distiller. Most bourbons use rye as the secondary grain, which delivers pepper and spice. Wheated bourbons replace rye with wheat, producing a softer, sweeter, more dessert leaning pour with rounded vanilla and caramel rather than baking spice.
