Barrell Seagrass is an ode to coastal memory. Described by its creators as an attempt to evoke "hot sun, brisk air, dry sand, and oceanside vegetation," it is one of the most distinctive rye whiskeys Barrell Craft Spirits has produced — and one of the most celebrated American whiskies of recent years. Fred Minnick ranked it No. 2 on his Top 100 American Whiskeys of 2021, and it earned a Platinum Medal from the L.A. Spirits Awards the same year.
Seagrass is built from a blend of American and Canadian rye whiskeys, each component sourced, finished, and married with exceptional care. Each ingredient is finished separately in one of three cask types: Martinique Rhum Agricole barrels (which add grassy, floral, coastal aromatics), Malmsey Madeira barrels (which add oxidative, nutty acidity), and apricot brandy casks (which deliver the bright tropical and stone fruit character that defines the expression). When each set of secondary maturation flavors peaked, those casks were pulled and slowly married into the final blend. The result is a rye whiskey that is genuinely unlike anything else on the market. Blended to taste and bottled at true cask strength — this batch is 118.4 proof (59.2% ABV).

Color: Pale tawny with straw highlights — light and beach like in the glass
Nose: A perfume-like concentration of bright tropical and orchard fruit — honeydew melon, ripe apricot, plum, and pineapple. The rye base reveals itself in sea-like salinity, tarragon, and elderflower. Vanilla, caramel, and orange bloom with air.
Palate: Sweet and juicy — pear, lychee, and white grapefruit open, followed by classic rye spice of cinnamon, rosemary, fennel, and rosehip. The apricot brandy brings tropical fruit to the forefront, balanced by the oxidative nutty acidity of the Madeira. Oily and full, with waves of sweet fruit syrup and a solid vanilla background.
Finish: Long and coastal — rye spice, apricot brandy sweetness, and the maritime minerality of chalk dust, flint, and a distant sea breeze linger together.

Every batch of Barrell Seagrass is blended to taste rather than to a target proof, then bottled at true cask strength — whatever ABV the final blend lands at. This means subtle proof variations between batches are intentional, not inconsistencies. The proof on the label reflects the specific batch in this bottle.
What makes the three-cask finish approach so different?
Rather than finishing the entire blend in multiple casks simultaneously, Barrell finishes each rye ingredient separately in its own cask type — pulling each at peak flavor development before marrying the components together. This preserves the distinct character of each finish (grassy from the Martinique rum, nutty and acidic from the Madeira, bright fruit from the apricot brandy) rather than blending them prematurely.
