Scorch was the Ardbeg Day release for 2021, and the theme was fire. The distillery took casks and charred them far beyond any normal specification, to a level it describes as fiercely charred, then filled them with heavily peated Ardbeg spirit and left the result in Dunnage Warehouse 3, the traditional earth floored warehouse that sits closest to the sea. Charring a cask is standard practice, but the degree matters enormously. A heavier char burns deeper into the wood, breaking down more of the timber's structure and creating a thicker layer of active carbon on the inside surface. That carbon strips out harsher sulphury compounds while the caramelised sugars beneath release far more vanilla, spice and dark toasted character than a light char ever would. Against Ardbeg's already substantial peat, the effect is intense rather than smooth. The distillery's own framing calls it a flavour breathing dragon, and the label sets out what to expect: toasted cloves and wisps of sweet peat smoke interfacing with thick clouds of sinew wood and sage. There is charcoal and ash here in abundance, but also a genuine sweetness underneath that the char has drawn out of the oak. Bottled at 46 percent alcohol by volume, non chill filtered and at natural colour, so nothing has been removed or corrected. This was a one time annual release for Fèis Ìle and has not been repeated. The illustrated dragon carton is part of the appeal and worth keeping. Drink it neat and give it time in the glass.

Tasting Notes
Color: Deep gold with a warm copper cast, natural and uncoloured.
Nose: Toasted cloves lead, with wisps of sweet peat smoke meeting thick charred wood, sage and a dry ashy edge.
Palate: Intense and fiery, with charcoal and burnt wood against a caramelised sweetness drawn out of the heavy char, joined by clove, black pepper and herbal notes.
Finish: Long and smoky, closing on embers, tar and lingering sweet spice.
