Centenario 18 is where Flor de Caña stops being a cocktail bottle and becomes something you pour into a glass and leave alone. The distillery has stood at the foot of the San Cristóbal volcano in Chichigalpa, Nicaragua since 1890, still run by the same family five generations on, and this is a single estate rum in the literal sense: the sugarcane, the distillation, the aging and the bottling all happen in one place under one operation. Eighteen years is a serious commitment in a tropical climate. Heat drives evaporation hard, so the angels take a far larger share here than they would in a temperate warehouse, and what survives is concentrated in a way that a Scottish eighteen year old is not. The rum matures slowly in ex bourbon American oak, and the producer states that no sugar, additives or artificial ingredients are used at any point, which matters enormously in a category where heavy dosing is common and where sweetness is often mistaken for age.
