The bourbon then receives a secondary maturation in casks that previously held Oloroso sherry, the rich, nutty style of sherry from southern Spain. The wine cask adds layers of dried fruit, toasted nuts and dark sweetness on top of the bourbon's caramel, chocolate and charred oak. It is bottled at cask strength of 114.06 proof, without dilution, for a full-bodied, layered pour that moves from fruit sweetness to warming spice. Expect a deep, rich nose of dried figs, raisins, toasted pecan, caramel and seasoned oak. The palate is full and round, with dark cherry, cocoa, brown sugar, orange peel and baking spice. The finish is long and warming, with dried cherry, dark cocoa, clove and toasted pecan, followed by lingering oak spice and a savoury hint of tobacco.
