Palo santo, a fragrant wood with a citrusy, faintly confectionery character, leads alongside jasmine and sage, while the sage balances the resinous notes with a herbaceous, almost savoury edge and hints of bright peppermint. The base is a Mexican neutral grain spirit of corn, rye, wheat and barley, distilled in copper pot stills and bottled at 86 proof in a pale seafoam glass bottle. Expect a beautifully balanced and aromatic gin with juniper, palo santo and jasmine on the nose, a herbal, floral and citrusy palate, and a warming, resinous finish from the palo santo and myrrh.
